Butterscotch Poorman's Pudding

We love this birthday alternative to cake

There aren't many things about his mother's cooking that my hubby remembers and requests. His dad was the cook in the house. Plus, he was (is?!) a fussy boy.  But for his birthday he prefered pie or Poorman's pudding to cake.  

This thrills me because the recipe is so much easier and faster than waiting for a cake to cool and slathering it with icing. This baby cooks in its own sauce in the most foolproof of ways.  This confirms my philosophy of life...choose one thing  and do it well. It keeps things simple.               

(BTW, don't expect or assume healthy just cause I wrote it. This is pure treat)    

 

Guy's Birthday Cake - Butterscotch Poorman's Pudding

Serving Size: 6   

SAUCE

  1 1/2  cups  brown sugar
  1 1/2 cups  hot water
  1 tablespoon  butter
  1 teaspoon  vanilla

PUDDING                

  pinch  salt
  1 teaspoon  vanilla
  1   cup  flour
  1/4 teaspoon  salt
  2  teaspoons  baking powder
  1/2  cup  brown sugar
  1 tablespoon  butter -- melted
   1/2 cup  milk

SAUCE:
Bring sugar and hot water to a boil in a medium pot, adding butter and salt. Boil for 3 minutes. Add vanilla when boiled.


PUDDING:
 In a large bowl mix flour salt and baking powder together, add vanilla and brown sugar, then add melted butter and milk.  Spread into well buttered casserole dish.  Pour sauce over cake mixture and bake in 375F oven until golden brown, about 30-40 minutes.  Cake should be firm and brown and sauce should be bubbling slightly.
